Spicy Grilled Shrimp Tacos with Fresh Pico De Gallo

Ingredients
-
1lb peeled and deveined Shrimp
- 1tbsp olive oil
-
1 tbsp Woos! Hot Sauce
- ¼ tsp smoked paprika
- ¼ tsp salt
- ¼ tsp pepper

1 cup chopped fresh Tomatoes
- 1/2 a chopped white or red onion
-
1/2 cup chopped cilantro
- 1-2 clove minced garlic
- zest and juice of 1 lime
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp coriander powder

Corn or Flour Tortillas
- Limes
- Cotijo cheese
- Cilantro
- Thinly sliced radish
- sliced avacado

Directions
In a bowl mix together your chopped tomato, onion, cilantro, and garlic. Then add the zest and juice of a lime along with salt, pepper and coriander, stir to incorporate. This can be made in advance and will keep nicely in the fridge, as it sits the flavors meld and the sharpness from the onion and garlic mellows with the acidity of the tomato and lime.
- For the shrimp, start by heating a cast iron grill pan on high heat. In a large bowl add the cleaned shrimp along with the olive oil, hot sauce, paprika, salt and pepper- stir to coat evenly. When the pan is hot place your shrimp and cook until tender and pink. This will take just a few minutes on each side.
